When/how can I evolve myself and my partner?

Just like previous Mystery Dungeon games, you can only evolve after conquering, well, everything (in the story). After the main story, you can visit Lapras and choose to go to "the remote parts of the world." Select the Sea of Wonders, and then the Tree of Life. Talk to Xerneas to evolve someone on your team. After completing the Epilogue story as well, you'll be able to evolve yourself and your partner, too.
